I recently decided to treat myself to an order of high quality milk chocolate bars from Chocosphere (which is probably blasphemy to real chocolate fans, but I've always preferred Milk to Dark).
It's taken me about a month to get through them all, and while I was gorging myself, I made some notes, which I thought I'd share with you all. While I don't pretend to be some great chocolate connoisseur, there's a great range in quality and taste of different bars, as you can see from my ratings.
Isis Belgian Milk Chocolate
Country: Belgium
Light, creamy texture that comes from a chocolate high in cocoa butter, very sweet but with a slightly bitter aftertaste. Very flat wide chunks give little “cleft” to the texture. Simple, unsophisticated candy, lacking complex layers.

Plantations Arriba Chocolate
Country: Ecuador, 38% Cocoa
Dark earthy scent, crumbling, almost chalky texture which could be the result of no vegetable fat added. Yields to a strong chocolate flavor with hints of nuts, coffee and licorice. As dark as Milk chocolate could be. Imagine Conrad's trek into the jungle. But bitter and ultimately not palatable,

Valrhona Le Lacte
Country: France, 40% Cocoa
Flat panels of excellent chocolate, with tastes of caramel, butterscotch, brown sugars, and with hint a of Strawberry & pineapple. Slightly malty afternote. Chewy smooth texture. Light, aromatic scent of brown sugar & maple syrup. Recommended.

Lindt Excellence
Country: France
Very creamy texture. Extremely buttery flavor with hints of butterscotch, molasses, corn syrup. Soft & silky at roomer temperature. Similar to Valrhona but a little sweeter on the aftertaste. But good value considering price difference.

Caoba
Country: Venezuela, 41% cocoa
Earthy, burnt taste, but not unpleasant. Aromatic and slightly bitter, tastes of coffee and dark toffee with a sweet aftertaste of bananas, nuts and bourbon.

Santander
Country: Colombia, 36% cocoa
A deep roasted single origin chocolate, with the intense flavor of fresh coffee and brazil nuts with a hint of molasses. This is a milk chocolate that wants to grow up to be a dark chocolate.

Nirvana
Country: Belgium
Nirvana is a range of chocolates, made with different single origin beans. The one I tasted came from Papua, and was a smooth, subtle chocolate. Light in taste (unlike the other richer chocolates that are heavier in cocoa butter and sugar) a refreshing milk chocolate, with a slight hazelnut and lemon zest note.

Chocolat Bonnat Java
Country: France, 65% cocoa
I expected a milk chocolate with 65% cocoa content to pack quite a kick, and this one delivered. Think of it as the espresso of Milk. Strong, smooth, with tones of coffee and licorice. Not for the feint hearted. One of three milk chocolates that Bonnat produce.

Green & Black's Organic Milk
Country: America, 35% cocoa
This bar bills itself as “darker shade of milk chocolate” and it is certainly a rich, deep chocolate, with overtones of dark caramel and blackcurrant. It's also has a creamy smooth texture that elevates this above many of the other brands I tried. Recommended.

Chocolove Vintage 2004
Country: Java, 33% cocoa
The pack claims this has hints of coconut, caramel, coffe and banana. I'm not too sure about that, because this was the purest milk chocolate I tasted. Pure, virgin, smooth, unadulterated chocolate. But rather than making this unsophisticated, the opposite is true - this is just about as good as it gets. And without doubt, the very best of the bunch. Highly recommended.

So there you go. Although I picked up a few of these locally, most of them can be ordered from Chocosphere who offer a fast, professional service - I would definitely recommend trying the Chocolove Vintage, the Green & Black and the Valrhona.
